Easy Recipe – Italian Chopped Salad
Part of our programs at OPI Intensive and OPI involve teaching our participants the life skills they need to thrive on their own. One basic life skill that many Americans are lacking in is how to create delicious, healthy food. Our cooking classes teach you a series of skills as well as a stable of go-to recipes that are easy, quick and delicious. Today we’d like to share one of those recipes:
Italian chopped Salad
INGREDIENTS
Produce:
- One head of romaine lettuce
- One bunch of spinach
- One Cucumber
- 2 Roma Tomatoes
Meats and Cheeses:
- One package Pancetta
- One stick Genoa Salami
- One stick Pepperoni
- One tub fresh mozzarella balls
Toppings:
- One can green sliced olives
- One can artichoke hearts
- One jar capers
- One jar pimiento peppers (Can substitute with roasted peppers)
Dressing:
- Olive Oil
- Balsamic Vinegar
- Oregano leaf
- Salt
- Pepper
INSTRUCTIONS
Step One: Rinse romaine and destem and rinse spinach. Chop both lettuce and spinach.
Step Two: Dice tomatoes and cucumber.
Step Three: Take each meat stick and quarter them, while also slicing Pancetta into thin strips.
Step Four: Mix equal parts olive oil and balsamic to fit needs. Season with salt, pepper, and oregano to taste. Whisk ingredients together.
Step Five: Place all ingredients into a bowl and mix together, either pour in dressing and toss to coat, or leave dressing on side and toss remaining ingredients.
Step Six: Enjoy!
